Onions with cheese

eople who love baked onions call this a great supper. People who quite like onions call it a great side dish to lamb, chicken or steak.

Serves 4


  • 8 medium white onions
  • 2 tbsp olive oil
  • 4 tbsp grated parmesan cheese
  • pinch of grated nutmeg
  • sea salt and freshly ground black pepper
  • 250ml single or whipping cream
  • half tsp smoked paprika
  1. Heat the oven to 180C. Peel the onions, and arrange in a lightly oiled baking tray so that they fit snugly side by side.

  2. Drizzle with the olive oil and bake for 1 hour until soft. Remove from the oven, and turn the heat to 220C.

  3. Combine the cheese, nutmeg, salt, pepper and cream in a jug or bowl, stirring well. Pour it over the onions, and sprinkle with paprika.

  4. Return the dish to the oven for 15 minutes until the cheese sauce is golden brown and bubbling.
