Onions with cheese
eople
who love baked onions call this a great supper. People who quite like
onions call it a great side dish to lamb, chicken or steak.
Serves 4
- 8 medium white onions
- 2 tbsp olive oil
- 4 tbsp grated parmesan cheese
- pinch of grated nutmeg
- sea salt and freshly ground black pepper
- 250ml single or whipping cream
- half tsp smoked paprika
- Heat the oven to 180C. Peel the onions, and arrange in a lightly
oiled baking tray so that they fit snugly side by side.
- Drizzle with the olive oil and bake for 1 hour until soft. Remove
from the oven, and turn the heat to 220C.
- Combine the cheese, nutmeg, salt, pepper and cream in a jug
or bowl, stirring well. Pour it over the onions, and sprinkle
with paprika.
- Return the dish to the oven for 15 minutes until the cheese
sauce is golden brown and bubbling.
