Warm Mediterranean veg

meal in itself for vegetable lovers, or a simple, colourful accompaniment to fish, sausages, lamb or chicken.

Serves 4


  • 1 onion, peeled
  • 1 sweet red pepper
  • 1 sweet yellow pepper
  • 1 tbsp olive oil
  • 4 medium courgettes (zucchini)
  • 4 roma tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, crushed
  • 4 sprigs rosemary
  • 6 sprigs thyme sea salt
  • freshly ground black pepper
    1. Heat the oven to 180C. Cut the onion in half and finely slice. Cut the red and yellow peppers into long strips, discarding inner ribs and seeds.

    2. Heat the oil in a fry pan and fry the onion and peppers for 10 minutes until they start to soften. Slice the courgettes and tomatoes into rings.

    3. Arrange the onions and peppers in the base of a lightly oiled baking pan or gratin dish, and layer the sliced courgettes and tomatoes on top in any order you like.

    4. Mix the olive oil, lemon juice, garlic, rosemary, thyme, sea salt and pepper and drizzle over the top of the vegetables. Bake for 1 hour until tender, and serve hot or warm.
